  • 4 large Portobello mushrooms
  • 1 cup Italian sausage (sweet or spicy, cooked and crumbled)
  • 8 oz cream cheese (softened)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp fresh parsley (chopped)
  • 2 cloves garlic (minced)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Clean the Portobello mushrooms and remove the stems, finely chopping them for the filling.
  3. In a skillet over medium heat, sauté the chopped mushroom stems with minced garlic until fragrant.
  4. In a mixing bowl, combine cooked sausage, cream cheese, sautéed mushroom stems, parsley, and half of the Parmesan cheese. Mix well.
  5. Generously stuff each mushroom cap with the mixture and sprinkle with remaining Parmesan cheese.
  6. Arrange stuffed mushrooms on the baking sheet and bake for about 25 minutes or until golden brown on top.
