  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 28 oz canned crushed tomatoes
  • 4 cups seafood stock
  • 1 lb cod or halibut fillets, cut into pieces
  • 1 lb shrimp, peeled and deveined
  • 1 lb mussels, cleaned
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté diced onion and minced garlic until fragrant and translucent (about 5 minutes).
  2. Stir in crushed tomatoes and seafood stock. Bring to a gentle simmer.
