  • 2 large sweet potatoes (about 800g), peeled and cubed
  • 1 tablespoon extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup canned coconut milk
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes.
  2. Spread the sweet potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes until tender.
  3. In a large pot over medium heat, sauté the chopped onions in olive oil until soft (about 5 minutes). Add minced garlic and cook for an additional minute.
  4. Add roasted sweet potatoes to the pot along with vegetable broth and coconut milk. Stir in cinnamon and let simmer for about 10 minutes.
  5. Remove from heat and blend the mixture until smooth using an immersion blender or a regular blender.
  6. Taste and adjust seasoning if needed. Serve hot, garnished with croutons or fresh herbs.
