  • 1 cup tri-color quinoa
  • 1 can (15 oz) black beans, rinsed
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • ½ red onion, finely chopped
  • ⅓ cup fresh cilantro, chopped
  • Juice of 2 limes
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. Combine with 2 cups of water or vegetable broth in a saucepan. Bring to a boil, cover, reduce heat to low, and cook for about 15 minutes until liquid is absorbed. Fluff with a fork and let cool.
  2. While the quinoa cools, prepare the veggies: dice the bell pepper, halve the cherry tomatoes, chop the red onion and cilantro.
  3. In a small bowl, whisk together olive oil, lime juice, salt, pepper, and optional spices like cumin or chili powder.
  4. In a large bowl, combine cooled quinoa with black beans, chopped veggies, and cilantro. Pour dressing over the salad and toss gently until well coated.
  5. Chill for at least 30 minutes before serving.
