  • 1 cup quinoa
  • 1 cup pomegranate seeds
  • 1 orange, segmented
  • 1 lime, segmented
  • ½ small red onion, diced
  • ¼ cup fresh cilantro, chopped
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water to remove bitterness. Drain well.
  2. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low. Cover and simmer for about 15 minutes until water is absorbed.
  3. While quinoa cooks, zest and segment the orange and lime.
  4. In a large bowl, mix cooked quinoa with pomegranate seeds, citrus segments, red onion, and cilantro.
  5. Drizzle olive oil over the mixture and season with salt and pepper. Toss gently to combine.
  6. Chill in the fridge for at least 30 minutes before serving for flavors to meld.
