  • 1 cup pearl barley
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons freshly squeezed lemon juice
  • 6 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the barley under cold water. In a medium saucepan, combine rinsed barley with 3 cups of water and a pinch of salt. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 30-40 minutes until tender. Drain excess water.
  2. While the barley cooks, chop the cucumber, halve the cherry tomatoes, slice the red onion, and chop the parsley.
  3. In a small bowl or jar, whisk together lemon juice and olive oil. Season with salt and pepper to taste.
  4. Once the barley has cooled slightly, combine it in a large bowl with chopped vegetables. Drizzle the dressing over the mixture.
  5. Stir gently until well combined; let sit for about 10 minutes before serving.
