Ingredients
  

Artichokes
  • 4 large artichokes trimmed and cleaned
  • 2 cups white wine for braising
  • 1 cup vegetable broth
  • 1 lemon juiced
  • 2 tablespoons olive oil for sautéing
  • Salt to taste
  • Pepper to taste
Cashew Mandarin Tarragon Aioli
  • 1 cup raw cashews soaked for 2 hours
  • 1 clove garlic minced
  • 1 tablespoon fresh tarragon chopped
  • 1 mandarin juiced
  • 2 tablespoons water to adjust consistency
  • Salt to taste

Method
 

Prepare the Artichokes
  1. Trim and clean the artichokes, removing tough outer leaves and cutting off the tops.
  2. In a large pot, heat olive oil over medium heat and sauté the artichokes until lightly browned.
  3. Add white wine, vegetable broth, lemon juice, salt, and pepper, then cover and simmer for 30-40 minutes until tender.
Make the Aioli
  1. In a blender, combine soaked cashews, garlic, tarragon, mandarin juice, and salt.
  2. Blend until smooth, adding water as needed to achieve desired consistency.
Serve
  1. Plate the braised artichokes and drizzle with the cashew mandarin tarragon aioli.
  2. Garnish with additional tarragon if desired.
