Ingredients
  

Cookie Base
  • 1 cup butter softened
  • 1 cup sugar
  • 2 cups flour all-purpose
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 large egg
Watermelon Icing
  • 2 cups powdered sugar
  • 3 tablespoons milk
  • 1 teaspoon watermelon extract
  • green food coloring for decoration
  • red food coloring for decoration

Method
 

Prepare the Cookie Dough
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing well. In another bowl, combine flour and baking powder, then gradually add to the wet mixture.
  3. Chill the dough for 30 minutes.
Bake the Cookies
  1. Roll out the chilled dough and use a cookie cutter to cut out watermelon slice shapes.
  2. Place the cookies on a baking sheet and bake for 10 minutes or until lightly golden.
Decorate the Cookies
  1. In a bowl, mix powdered sugar, milk, and watermelon extract to create the icing.
  2. Divide the icing into two bowls, tint one green and the other red. Decorate the cookies with the icing to resemble watermelon slices.
