Ingredients
  

Vegetables
  • 1 pound green beans trimmed
  • 2 medium potatoes cubed
  • 1 cup cherry tomatoes halved
  • 1 small red onion sliced
Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • to taste salt
  • to taste pepper

Method
 

Prepare the Potatoes
  1. Preheat the oven to 425°F (220°C). Toss the cubed potatoes with olive oil, salt, and pepper, then spread them on a baking sheet.
  2. Roast the potatoes in the oven for about 25-30 minutes until crispy and golden.
Cook the Green Beans
  1. In a large pot, bring water to a boil. Add the green beans and cook for 3-4 minutes until bright green and tender-crisp.
  2. Drain the green beans in a colander and rinse with cold water to stop the cooking process.
Combine and Serve
  1. In a mixing bowl, combine the roasted potatoes, green beans, cherry tomatoes, and red onion.
  2. In a small bowl, whisk together the dressing ingredients and pour over the salad. Toss gently to combine.
  3. Serve warm and enjoy!
