Ultimate Eggs Benedict

Ingredients
  

For the Eggs Benedict
  • 4 large eggs fresh
  • 4 slices Canadian bacon
  • 2 English muffins split
  • 1 cup hollandaise sauce prepared or homemade

Method
 

Prepare the Hollandaise Sauce
  1. In a saucepan, whisk together egg yolks and lemon juice over low heat until thickened.
  2. Slowly drizzle in melted butter while whisking continuously until the sauce is smooth.
Poach the Eggs
  1. Bring a pot of water to a simmer and add a splash of vinegar.
  2. Crack each egg into a small bowl and gently slide into the water.
  3. Cook for about 3-4 minutes until the whites are set but yolks are still runny.
  4. Remove with a slotted spoon and drain on paper towels.
Cook the Canadian Bacon
  1. In a skillet, cook the Canadian bacon over medium heat until browned, about 2-3 minutes per side.
Toast the English Muffins
  1. Toast the English muffin halves until golden brown.
Assemble the Dish
  1. Place a slice of Canadian bacon on each muffin half, top with a poached egg, and drizzle with hollandaise sauce.
