Ingredients
  

Vegetables
  • 2 medium eggplants sliced
  • 2 medium zucchinis sliced
  • 4 medium potatoes peeled and sliced
  • 2 cups tomato sauce homemade or store-bought
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat the oven to 180°C (350°F).
  2. In a frying pan, heat olive oil and sauté the onion and garlic until translucent.
  3. Layer the sliced potatoes, eggplants, and zucchinis in a baking dish.
  4. Pour the tomato sauce over the layered vegetables and season with salt and pepper.
  5. Cover with foil and bake for 40 minutes, then remove the foil and bake for an additional 20 minutes until golden.
