Ingredients
  

Carrot Dogs
  • 4 pieces carrots peeled and trimmed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Chili Topping
  • 1 can black beans drained and rinsed
  • 1 cup tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 cup corn optional

Method
 

Prepare Carrots
  1. Preheat the grill to medium heat. Peel and trim the carrots to resemble hot dogs.
Season Carrots
  1. In a bowl, mix olive oil, smoked paprika, garlic powder, and onion powder. Coat the carrots with this mixture.
Grill Carrots
  1. Place the seasoned carrots on the grill and cook for about 10-15 minutes, turning occasionally until tender.
Prepare Chili
  1. In a pot, combine black beans, tomato sauce, chili powder, and cumin. Heat over medium heat until warmed through.
Assemble
  1. Serve the grilled carrot dogs topped with the chili mixture. Enjoy!
