Ingredients
  

Sardines
  • 4 whole sardines cleaned and scaled
Tomato Garlic Sauce
  • 2 cups canned tomatoes crushed
  • 4 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • 1 tablespoon parsley chopped, for garnish

Method
 

Prepare the Sauce
  1. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  2. Add crushed tomatoes and paprika, season with salt and pepper, and let simmer for 10 minutes.
Cook the Sardines
  1. In another skillet, heat a little olive oil over medium-high heat.
  2. Season sardines with salt and pepper, then sear them in the hot skillet for about 3-4 minutes on each side until golden brown.
Serve
  1. Serve the sardines topped with the tomato garlic sauce and garnish with chopped parsley.
