Spanakopita (Greek Spinach Pie)

A delicious Greek spinach pie made with flaky phyllo pastry and a savory filling of spinach and feta cheese.

Ingredients
  

Filling
  • 1 lb Fresh Spinach washed and chopped
  • 8 oz Feta Cheese crumbled
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 2 tbsp Olive Oil for sautéing
  • 1 tsp Dill fresh or dried
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
Pastry
  • 1 package Phyllo Dough thawed
  • 1/2 cup Butter melted

Method
 

Prepare the Filling
  1. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
  2. Add chopped spinach and cook until wilted. Remove from heat and let cool.
  3. In a bowl, combine cooled spinach mixture with feta cheese, dill, salt, and pepper.
Assemble the Pie
  1. Preheat the oven to 375°F (190°C).
  2. Lay one sheet of phyllo dough in a greased baking dish, brushing with melted butter. Repeat with several layers.
  3. Spread the filling evenly over the phyllo layers.
  4. Cover with more phyllo sheets, brushing each layer with butter. Tuck edges in to seal.
  5. Cut the top layers into squares for serving.
  6. Bake for 45 minutes or until golden brown.
