Ingredients
  

Meatballs
  • 1 lb ground beef
  • 1 cup bread crumbs
  • 1 large egg
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 1 clove garlic minced
  • 1/4 cup parsley chopped
Lemon Sauce
  • 1 cup chicken broth
  • 1 large lemon juiced
  • 2 tbsp olive oil
  • 1 tbsp cornstarch
  • 1 tbsp water

Method
 

Prepare Meatballs
  1. In a mixing bowl, combine ground beef, bread crumbs, egg, oregano, salt, pepper, minced garlic, and chopped parsley. Mix until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet.
  3. Preheat the oven to 400°F (200°C) and bake the meatballs for 20 minutes or until cooked through.
Prepare Lemon Sauce
  1. In a skillet, heat olive oil over medium heat. Add chicken broth and lemon juice, bringing to a simmer.
  2. In a small bowl, mix cornstarch and water until smooth. Stir into the skillet and cook until the sauce thickens.
  3. Once the meatballs are cooked, add them to the skillet with the lemon sauce and simmer for an additional 5 minutes.
