Rice Ingredients
  • 2 cups Long Grain Rice Rinsed and drained
  • 4 cups Chicken Broth Or water
  • 1 tablespoon Vegetable Oil For cooking
  • 1 teaspoon Salt To taste
Vegetable Ingredients
  • 1 medium Onion Chopped
  • 1 medium Bell Pepper Chopped
  • 2 cloves Garlic Minced
  • 1 tablespoon Tomato Paste
  • 2 medium Tomatoes Chopped
Spices
  • 1 teaspoon Thyme
  • 1 teaspoon Curry Powder
  • 1 teaspoon Smoked Paprika

Method
 

Cooking the Rice
  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and garlic, sauté until translucent.
  3. Stir in the chopped bell pepper and tomatoes, cooking until softened.
  4. Add the tomato paste and spices, stirring well to combine.
  5. Add the rinsed rice and chicken broth, bring to a boil.
  6. Reduce heat to low, cover, and simmer for 30-40 minutes until rice is cooked.
