Ingredients
  

Roasted Vegetables
  • 2 cups mixed vegetables such as bell peppers, carrots, and zucchini
  • 2 tablespoons olive oil for roasting
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
Bowl Assembly
  • 1 cup cooked quinoa
  • 1 cup chickpeas cooked or canned
  • 1 cup yogurt for topping
  • 1 cup fresh cilantro for garnish

Method
 

Roasting the Vegetables
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the mixed vegetables with olive oil, cumin, coriander, turmeric, and salt.
  3. Spread the vegetables on a baking sheet and roast for 25-30 minutes, or until tender.
Assembling the Bowls
  1. In each bowl, layer cooked quinoa, roasted vegetables, chickpeas, and a dollop of yogurt.
  2. Garnish with fresh cilantro before serving.
