Ingredients
  

Rice Kheer
  • 1 cup Basmati rice rinsed and soaked
  • 4 cups milk whole or full-fat
  • 1/2 cup sugar adjust to taste
  • 1/4 teaspoon cardamom powder
  • 1/4 cup chopped nuts almonds and pistachios
  • 1 tablespoon ghee for cooking
Berry Compote
  • 2 cups mixed berries fresh or frozen
  • 1/4 cup sugar adjust to taste
  • 1 tablespoon lemon juice

Method
 

Prepare Rice Kheer
  1. In a saucepan, heat ghee and add the soaked rice. Sauté for a few minutes.
  2. Add milk and bring to a boil. Reduce heat and simmer until rice is cooked and kheer thickens.
  3. Stir in sugar and cardamom powder. Cook for a few more minutes.
  4. Remove from heat and let it cool.
  5. Garnish with chopped nuts before serving.
Prepare Berry Compote
  1. In a mixing bowl, combine mixed berries, sugar, and lemon juice.
  2. Cook over medium heat until berries break down and mixture thickens.
  3. Remove from heat and let it cool.
