Ingredients
  

Potato Shells
  • 2 large potatoes peeled and cubed
  • 1 cup flour for dough
  • 1 teaspoon salt
  • 1 tablespoon olive oil
Salsa Filling
  • 1 cup tomatoes diced
  • 1/2 cup onion finely chopped
  • 1 tablespoon cilantro chopped
  • 1 teaspoon lime juice
  • 1 teaspoon jalapeño finely chopped

Method
 

Prepare Potato Shells
  1. Boil the potatoes until tender, then mash them.
  2. Mix the mashed potatoes with flour, salt, and olive oil to form a dough.
  3. Roll out the dough and cut into desired shapes.
  4. Bake the shells in the oven until golden brown.
Make Salsa Filling
  1. In a mixing bowl, combine diced tomatoes, onion, cilantro, lime juice, and jalapeño.
  2. Mix well and set aside to let flavors meld.
Assemble Cannoli
  1. Once the shells are cooled, fill them with the salsa mixture.
  2. Serve immediately for best flavor.
