  • 1/4 cup butter softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
Topping
  • 1 cup pineapple chunks canned or fresh
  • 1/4 cup maraschino cherries

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and brown sugar until smooth.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the flour, mixing until just combined.
  5. In a baking sheet, arrange pineapple chunks and cherries in a single layer.
  6. Spoon the cookie batter over the fruit, spreading it evenly.
  7. Bake for 10-12 minutes or until golden brown.
  8. Let cool for a few minutes before inverting onto a serving plate.
