  • 4 pieces bell peppers any color
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon balsamic vinegar optional

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash the bell peppers and cut them in half, removing seeds.
  3. Place the peppers on a baking sheet, cut side up.
  4. Drizzle with olive oil, and season with salt and black pepper.
  5. Roast in the oven for about 30 minutes, until tender and slightly charred.
  6. Remove from the oven and drizzle with balsamic vinegar if desired.
