  • 4 cups cooked rice
  • 2 large chicken thighs boneless, skinless
  • 4 large eggs
  • 1 cup dashi broth
  • 3 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sugar
  • 1 cup green onions sliced

Method
 

Cooking Instructions
  1. In a large skillet, combine dashi broth, soy sauce, mirin, and sugar. Bring to a simmer.
  2. Add chicken thighs and cook until no longer pink, about 10 minutes.
  3. Beat the eggs in a bowl and pour over the chicken. Cover and cook until eggs are set.
  4. Serve over cooked rice and garnish with green onions.
