Ingredients
  

Meat
  • 1 lb chicken breast diced
  • 1 lb andouille sausage sliced
Vegetables
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 1 cup celery chopped
  • 3 cloves garlic minced
Grains
  • 1.5 cups long-grain rice
Liquids
  • 4 cups chicken broth
  • 1 can diced tomatoes with juices
Spices
  • 1 tbsp cajun seasoning
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

Cooking Steps
  1. In a large pot, heat oil over medium heat. Add chicken and sausage, cooking until browned.
  2. Add onion, bell pepper, celery, and garlic. Sauté until vegetables are tender.
  3. Stir in rice, chicken broth, diced tomatoes, cajun seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until rice is cooked.
  5. Remove from heat and let sit for 5 minutes before serving.
