Ingredients
  

Couscous Base
  • 2 cups couscous
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
Vegetables
  • 1 cup carrots, diced
  • 1 cup zucchini, diced
  • 1 cup bell pepper, diced
  • 1 cup chickpeas, drained
Spices
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Couscous
  1. In a couscous pot, bring vegetable broth to a boil. Stir in couscous and olive oil, remove from heat, cover, and let sit for 5 minutes.
Cook the Vegetables
  1. In a separate pan, sauté carrots, zucchini, and bell pepper in olive oil until tender. Add chickpeas and spices, cooking for an additional 5 minutes.
Combine and Serve
  1. Fluff the couscous with a fork and mix in the sautéed vegetables. Serve warm.
