Ingredients
  

Soup Base
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup rice
  • 1 cup corn, frozen
  • 1 cup black beans, drained
  • 1 cup diced tomatoes
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 lime juice freshly squeezed

Method
 

Cooking Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Stir in cumin and chili powder, cook for another minute.
  3. Pour in chicken broth, add shredded chicken, rice, corn, black beans, and diced tomatoes.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes until rice is cooked.
  5. Season with salt, pepper, and lime juice before serving.
