Ingredients
  

For the Matzo Balls
  • 1 cup matzo meal
  • 4 large eggs
  • 1/4 cup water
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
For the Pozole
  • 6 cups chicken broth
  • 1 can hominy drained and rinsed
  • 1 cup shredded chicken
  • 1 cup diced onion
  • 2 cloves garlic minced
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • 1 cup chopped cilantro for garnish

Method
 

Prepare the Matzo Balls
  1. In a mixing bowl, combine matzo meal, eggs, water, salt, and vegetable oil. Mix until well combined.
  2. Refrigerate the mixture for 30 minutes.
  3. Bring a large pot of salted water to a boil. Form the matzo mixture into balls and drop them into the boiling water.
  4. Cook for about 20 minutes until they float to the top.
Prepare the Pozole
  1. In a large pot, combine chicken broth, hominy, shredded chicken, onion, garlic, lime juice, cumin, oregano, and chili powder. Bring to a simmer.
  2. Let it cook for 30 minutes to allow the flavors to meld.
  3. Serve the pozole hot, topped with matzo balls and garnished with cilantro.
