Ingredients
  

Beans and Rice
  • 1 cup red beans soaked overnight
  • 1 cup rice uncooked
  • 4 cups water
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Cooking Instructions
  1. In a slow cooker, combine soaked red beans, water, olive oil, onion, garlic, cayenne pepper, smoked paprika, thyme, salt, and black pepper.
  2. Cover and cook on low for 6-8 hours or until beans are tender.
  3. About 30 minutes before serving, add the uncooked rice to the slow cooker.
  4. Stir well and continue cooking until rice is tender.
