Fish Fillets
  • 4 pieces fish fillets such as catfish or tilapia
Batter
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper optional for heat
Oil for Frying
  • 2 cups vegetable oil for frying

Method
 

Preparation
  1. In a mixing bowl, combine buttermilk, paprika, salt, black pepper, and cayenne pepper.
  2. Dip each fish fillet into the buttermilk mixture, then dredge in flour to coat.
Cooking
  1. Heat vegetable oil in a frying pan over medium heat.
  2. Fry the coated fish fillets for about 3-4 minutes on each side or until golden brown.
  3. Remove from the pan and drain on paper towels.
