Ingredients
  

Creme Brulee Base
  • 2 cups heavy cream
  • 1 cup mashed Japanese sweet potatoes
  • 4 egg yolks
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
Topping
  • 1/4 cup granulated sugar for caramelizing

Method
 

Prepare the Creme Brulee
  1. Preheat the oven to 325°F (160°C).
  2. In a blender, combine heavy cream, mashed sweet potatoes, egg yolks, sugar, vanilla extract, and salt. Blend until smooth.
  3. Pour the mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water halfway up the sides of the ramekins.
  4. Bake for 30 minutes or until set. Remove from the oven and let cool.
Caramelize the Sugar
  1. Sprinkle granulated sugar evenly over the cooled creme brulee.
  2. Using a kitchen torch, caramelize the sugar until golden brown.
  3. Let it sit for a few minutes before serving.
