Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1 cup butter softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 teaspoon baking powder
Filling
  • 1 cup peach preserves
  • 1 teaspoon cinnamon
Topping
  • 1 cup powdered sugar
  • 2 tablespoons milk

Method
 

Prepare the Dough
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  2. In a separate bowl, combine the flour and baking powder. Gradually add to the creamed mixture until well blended.
Shape and Bake
  1. Roll the dough into small balls and place them on a baking sheet. Make an indentation in the center of each ball.
  2. Fill each indentation with peach preserves and sprinkle with cinnamon.
  3. Bake for 12-15 minutes or until lightly golden.
Prepare the Topping
  1. In a small bowl, mix powdered sugar and milk until smooth. Drizzle over the cooled cookies.
