Ingredients
  

Chicken and Salad Base
  • 2 cups cooked chicken, shredded
  • 4 medium potatoes, diced boiled until tender
  • 1 cup fresh herbs, chopped such as parsley, dill, and chives
  • 1 cup Greek yogurt for dressing
  • 1 tablespoon olive oil for dressing
  • 1 teaspoon lemon juice for dressing
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Boil the diced potatoes until tender, then drain and let cool.
  2. In a large bowl, combine the shredded chicken, cooled potatoes, and chopped herbs.
  3. In a separate bowl, mix Greek yogurt, olive oil, lemon juice, salt, and pepper to create the dressing.
  4. Pour the dressing over the chicken and potato mixture and toss to combine.
  5. Serve chilled or at room temperature.
