Ingredients
  

Pasta
  • 12 oz ziti pasta or any pasta of choice
Cheese
  • 2 cups cottage cheese preferably low-fat
  • 1 cup mozzarella cheese shredded
  • 1/2 cup parmesan cheese grated
Sauce
  • 2 cups marinara sauce or any pasta sauce of choice
Vegetables
  • 1 cup spinach fresh or frozen
  • 1 cup mushrooms sliced
  • 1 cup bell pepper chopped
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cook the ziti pasta according to package instructions until al dente. Drain and set aside.
  3. In a mixing bowl, combine cottage cheese, mozzarella cheese, parmesan cheese, spinach, mushrooms, bell pepper, garlic powder, Italian seasoning, salt, and pepper.
Assembly
  1. In a baking dish, layer half of the cooked pasta, followed by half of the cheese mixture, and half of the marinara sauce.
  2. Repeat the layers with the remaining ingredients.
Baking
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
