Ingredients
  

Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1 bell pepper bell pepper diced
  • 1 cup red onion finely chopped
Other Ingredients
  • 1 cup feta cheese crumbled
  • 1/2 cup kalamata olives pitted and sliced
  • 3 tablespoons olive oil for dressing
  • 2 tablespoons red wine vinegar for dressing
  • 1 teaspoon oregano dried
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Chop all the vegetables and place them in a mixing bowl.
  2. Add the feta cheese and olives to the bowl.
  3. In a separate small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.
