Garlic Shrimp Mofongo

Ingredients
  

Shrimp and Mofongo Ingredients
  • 1 pound shrimp peeled and deveined
  • 3 large plantains green, peeled and cut into chunks
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon butter

Method
 

Prepare the Mofongo
  1. Boil the plantains in salted water until tender, about 15 minutes. Drain and let cool slightly.
  2. Mash the plantains in a mortar and pestle with garlic, salt, and olive oil until smooth.
Cook the Shrimp
  1. In a skillet, heat butter and sauté garlic until fragrant. Add shrimp, salt, and black pepper, cooking until shrimp are pink.
  2. Pour in chicken broth and simmer for a few minutes.
Serve
  1. Form the mofongo into a bowl shape and fill with shrimp mixture. Serve immediately.

Notes

For a spicier version, add crushed red pepper flakes to the shrimp.
