Ingredients
  

Crust
  • 2 cups crumbled graham crackers
  • 1/4 cup melted butter
  • 2 tablespoons sugar
Filling
  • 2 cups frozen watermelon cubed
  • 1/2 cup lemon juice
  • 1 cup heavy cream whipped
  • 1/4 cup powdered sugar

Method
 

Prepare the crust
  1. In a mixing bowl, combine the crumbled graham crackers, melted butter, and sugar. Mix until well combined.
  2. Press the mixture into the bottom of tart pans to form the crust.
Make the filling
  1. In a food processor, blend the frozen watermelon until smooth.
  2. Add lemon juice and blend again until combined.
  3. In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form.
  4. Gently fold the watermelon mixture into the whipped cream until fully combined.
Assemble and freeze
  1. Pour the filling into the prepared crusts and smooth the top.
  2. Place the tarts in the freezer for at least 45 minutes to set.
