Ingredients
  

Cheesecake Base
  • 200 grams digestive biscuits crushed
  • 100 grams butter melted
Cheesecake Filling
  • 400 grams cream cheese softened
  • 100 grams sugar
  • 200 ml double cream whipped
  • 1 teaspoon vanilla extract
Toppings
  • 200 grams strawberries sliced
  • 50 grams meringue broken into pieces

Method
 

Prepare the Base
  1. Mix the crushed digestive biscuits with the melted butter and press into the bottom of a springform pan.
Make the Filling
  1. In a mixing bowl, beat the cream cheese and sugar until smooth. Fold in the whipped double cream and vanilla extract.
Assemble the Cheesecake
  1. Spread the cheesecake filling over the biscuit base and refrigerate for at least 4 hours until set.
Serve
  1. Top with sliced strawberries and broken meringue pieces before serving.
