Ingredients
  

Pasta Salad Base
  • 2 cups elbow macaroni uncooked
  • 4 large eggs hard-boiled and chopped
  • 1 cup celery diced
  • 1 cup red bell pepper diced
  • 1 cup green onions sliced
Dressing
  • 1 cup mayonnaise
  • 2 tablespoons mustard yellow or Dijon
  • 1 teaspoon vinegar white or apple cider
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Method
 

Prepare the Pasta
  1. Cook the elbow macaroni according to package instructions. Drain and let cool.
Mix Ingredients
  1. In a large mixing bowl, combine the cooked macaroni, chopped eggs, celery, red bell pepper, and green onions.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, mustard, vinegar, salt, and pepper until smooth.
Combine Salad
  1. Pour the dressing over the pasta mixture and stir until everything is well coated. Chill in the refrigerator for at least 30 minutes before serving.
