Ingredients
  

Cookie Base
  • 1 cup butter softened
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
Strawberry Filling
  • 2 cups fresh strawberries sliced
  • 1 tablespoon sugar for macerating

Method
 

Prepare the Cookie Base
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, combine the flour and baking powder, then gradually add to the butter mixture.
  5. Roll out the dough and cut into boat shapes using a cookie cutter.
  6. Place the cookie shapes on a baking sheet and bake for 10 minutes or until golden.
Prepare the Strawberry Filling
  1. In a bowl, combine sliced strawberries with sugar and let sit for 10 minutes to macerate.
  2. Once the cookies are cooled, fill each cookie boat with the macerated strawberries.
