Crispy Masala Dosa

Ingredients
  

Dosa Batter
  • 2 cups rice soaked
  • 1 cup urad dal soaked
  • 1 tsp fenugreek seeds optional
  • water as needed
Potato Filling
  • 4 medium potatoes boiled and mashed
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 onion finely chopped
  • 2 green chilies finely chopped
  • 1 tsp ginger grated
  • 1 tsp turmeric powder
  • 2 tbsp oil for cooking
  • salt to taste

Method
 

Prepare Dosa Batter
  1. Soak rice and urad dal in water for at least 4 hours. Blend with water to a smooth batter.
  2. Ferment the batter overnight in a warm place.
Make Potato Filling
  1. Heat oil in a pan, add mustard seeds and cumin seeds, and let them splutter.
  2. Add onions, green chilies, and ginger; sauté until onions are translucent.
  3. Add turmeric powder and mashed potatoes; mix well and season with salt.
Cook Dosa
  1. Heat a griddle and pour a ladle of batter, spreading it into a thin circle.
  2. Cook until the edges lift and the bottom is golden brown.
  3. Place some potato filling in the center, fold, and serve hot.
