  • 1 lb Chicken breast, diced
  • 1 cup Rice uncooked
  • 1 can Black beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Cheddar cheese shredded
  • 2 cups Chicken broth
  • 1 tbsp Southwest seasoning
  • 1 cup Bell pepper, diced
  • 1 cup Onion, diced

Method
 

Cooking Instructions
  1. In a large pot, sauté the onion and bell pepper until softened.
  2. Add the diced chicken and cook until browned.
  3. Stir in the rice, black beans, corn, chicken broth, and southwest seasoning.
  4. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
  5. Remove from heat and stir in the cheddar cheese until melted.
