Prepare the Spaghetti Squash
- Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil on the cut sides and season with salt and pepper. Place cut side down in a baking dish and roast for 30-40 minutes until tender.
Make the Alfredo Sauce
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Stir in the heavy cream and bring to a simmer. Add the parmesan cheese, salt, and pepper, stirring until the cheese is melted and the sauce is smooth.
- Add the cooked chicken to the sauce and mix well.
Combine and Serve
- Once the spaghetti squash is cooked, use a fork to scrape out the strands.
- Top the spaghetti squash with the chicken alfredo sauce and serve immediately.
