Ingredients
  

Meatballs
  • 1 lb ground beef
  • 1 cup bread crumbs
  • 1 large egg
  • 2 tbsp Cajun seasoning
  • 1 tsp salt
Stew Base
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups mixed vegetables frozen or fresh

Method
 

Prepare Meatballs
  1. In a mixing bowl, combine ground beef, bread crumbs, egg, Cajun seasoning, and salt. Mix well and form into meatballs.
Cook Stew
  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until soft.
  2. Add chicken broth, diced tomatoes, and mixed vegetables. Bring to a boil.
  3. Carefully add meatballs to the pot. Reduce heat and simmer for 25-30 minutes until meatballs are cooked through.
