Ingredients
  

Topping
  • 200 grams broad beans fresh or frozen
  • 100 grams goats’ cheese crumbled
  • 1 tablespoon olive oil extra virgin
  • 1 tablespoon lemon juice freshly squeezed
  • to taste salt
  • to taste pepper
Bread
  • 4 slices ciabatta or any crusty bread

Method
 

Prepare the topping
  1. If using fresh broad beans, blanch them in boiling water for 2-3 minutes, then cool and remove the skins. If using frozen, simply thaw them.
  2. In a mixing bowl, combine the broad beans, goats’ cheese, olive oil, lemon juice, salt, and pepper. Mash lightly with a fork.
Toast the bread
  1. Toast the ciabatta slices until golden brown.
Assemble the bruschetta
  1. Top each slice of toasted bread with the broad bean and goats’ cheese mixture.
