Ingredients

Scale
  • 4 cups fresh pumpkin, cubed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • 2 tbsp olive oil

Instructions

  1. Prepare the pumpkin by cutting it in half, scooping out the seeds, and chopping it into chunks.
  2. In a large pot over medium heat, add olive oil and sauté the diced onion until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. Add pumpkin chunks along with cinnamon, nutmeg, and ginger; stir until fragrant.
  4. Pour in vegetable broth to cover the pumpkin completely. Bring to a boil, then reduce heat and simmer for about 20 minutes or until pumpkin is fork-tender.
  5. Blend the mixture until smooth using an immersion blender or traditional blender in batches.
  6. Stir in coconut milk and heat through without boiling. Serve hot, garnished with roasted pumpkin seeds if desired.
