  • 2 lbs beef chuck roast, cut into chunks
  • 5 dried guajillo chiles, stems and seeds removed
  • 1 cinnamon stick
  • 1 medium onion, chopped
  • 4 garlic cloves
  • 4 cups low-sodium beef broth
  • 2 bay leaves

Instructions

  1. Toast guajillo chiles in a dry skillet until fragrant (about 1 minute). Soak in hot water for 15-20 minutes until soft.
  2. In a blender, combine soaked chiles, garlic, onion, cinnamon stick, and 1 cup beef broth; blend until smooth.
  3. Marinate beef chunks in the chile mixture for at least 2 hours or overnight for deeper flavor.
  4. Place marinated beef in a slow cooker with remaining marinade and beef broth to cover. Add bay leaves and cook on low for 8 hours until tender.
  5. Shred the beef with forks and return to the pot; stir well before serving.
