  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 1 large bell pepper (red or green), diced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 6 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 1 tbsp chili powder
  • 1 cup crispy tortilla strips
  • 1 cup shredded cheddar or Monterey Jack cheese
  • ½ cup fresh cilantro, chopped

Instructions

  1. Dice the onion and bell pepper, and mince the garlic.
  2. In a large pot over medium heat, add olive oil and sauté the onion until translucent (about 5 minutes). Add garlic and bell pepper; cook until fragrant.
  3. Add chicken breasts along with chicken broth and fire-roasted tomatoes. Stir well.
  4. Season with cumin and chili powder. Simmer for 20 minutes until chicken is cooked through.
  5. Remove chicken from pot, shred with forks, and return to the soup.
  6. Serve hot in bowls topped with tortilla strips, cheese, and cilantro.
