  • 1 lb lean ground beef
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 8 soft corn tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar & Monterey Jack blend)
  • 1 cup sour cream (for topping)
  • ¼ cup fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, brown the ground beef with chopped onions and minced garlic for about 5-7 minutes. Drain excess fat.
  3. Stir in the enchilada sauce and let simmer for 2 minutes.
  4. In a greased baking dish, layer half of the corn tortillas on the bottom. Top with half of the beef mixture and a sprinkle of cheese.
  5. Repeat the layers with remaining tortillas, beef mixture, and finish with more cheese on top.
  6. Cover with aluminum foil and bake for 25 minutes; uncover during the last 5 minutes to allow cheese to bubble.
  7. Serve hot, garnished with sour cream and cilantro.
