  • 2 large eggs
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • 2 cups powdered sugar (for frosting)
  • 4 tbsp unsalted butter, softened (for frosting)
  • 3 tbsp whole milk (for frosting)
  • Green food coloring (for frosting)
  • Gummy eyeballs (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a cupcake pan with liners.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, followed by milk and vanilla.
  4. Gradually combine dry ingredients with the wet mixture until just blended.
  5. Spoon the batter into liners and bake for about 18–20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before frosting with green buttercream and adding gummy eyeballs on top.
