  • ¾ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • ½ cup milk
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 stick unsalted butter (softened)
  • 4 cups powdered sugar
  • Milk or cream (as needed)
  • Red food coloring (to taste)
  • Raspberry jam (for filling)

Instructions

  1. Preheat oven to 350°F (175°C) and line cupcake pan with liners.
  2. In a bowl, mix flour, cocoa powder, sugar, baking powder, and salt.
  3. In another bowl, whisk eggs, milk, vegetable oil, and vanilla; then combine with dry ingredients until just blended.
  4. Fill cupcake liners two-thirds full and bake for 18-20 minutes until a toothpick comes out clean. Cool completely.
  5. For the frosting, beat softened butter until creamy; gradually add powdered sugar and enough milk for desired consistency. Mix in red food coloring.
  6. Frost cooled cupcakes using a piping bag to create a brain-like texture.
