  • 2 large eggs
  • 1/2 cup heavy cream (for ganache)
  • 1/2 cup semi-sweet chocolate chips (for ganache)
  • 1/2 cup whipped cream filling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners.
  2. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt until combined.
  3. In another bowl, mix milk, vegetable oil, and eggs until smooth. Combine with dry ingredients and stir gently.
  4. Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes until a toothpick comes out clean.
  5. While cooling, heat heavy cream in a saucepan until simmering. Stir in chocolate chips until smooth to make the ganache.
  6. Once cooled, hollow out the center of each cupcake, fill with whipped cream filling, then top generously with chocolate ganache.
